Extra virgin olive oil is an ordinary part of family cooking across the Mediterranean. The main challenge is not safety — it is taste. Fresh oil high in polyphenols can catch at the back of the throat, and some children do not take to that at first.
How to soften the flavour
- Stir it into warm food such as rice, porridge or soup — heat softens the bite
- Blend it with creamy ingredients like egg, mashed potato or avocado
- Use it in roasting, where the flavour turns sweeter and gentler
- Start with a small amount and build up gradually
Simple dishes
- 1.Hot white rice with a little olive oil and a pinch of salt
- 2.Scrambled eggs cooked slowly in olive oil
- 3.Potato or sweet potato roasted in olive oil
- 4.Vegetable soup with a small spoonful stirred in before serving
- 5.Toast with olive oil in place of butter
